Research Strengths

Nutrigenomics and Precision Nutrition
Nutrigenomics and precision nutrition research examines the mechanisms of gene expression as regulated by micronutrients and other dietary constituents at the molecular level. Our projects focus on liver, heart, and gut health, as well as obesity and aging.

Nutritional Immunology
Nutritional immunology investigates the intricate interplay between metabolic and immune processes, exploring how diet, the gut microbiome, epigenetic regulation, and inflammation shape immune health and food allergy outcomes.

Clinical Nutrition
Clinical Nutrition explores the role of nutrition in preventing and managing disease, translating scientific evidence into effective dietary strategies that improve health outcomes.

Public Health and Community Nutrition
Public Health and Community Nutrition focuses on understanding and improving the nutritional health of populations through research, policy, and evidence-based interventions. This area evaluates nutritional status and develops programs such as nutrition education, food assistance, supplementation, and food fortification to promote health and well-being.
Public Health and Community Nutrition advances population health through nutritional epidemiology, policy research, and community-based interventions. The field promotes health and well-being by improving digital food and nutrition literacy and evaluating programs that enhance access to nutritious foods and nutrition resources.

Exercise and Sports Nutrition
Exercise and Sports Nutrition examines the role of nutrition in enhancing athletic performance, recovery, and body composition. Research in this area addresses low energy availability, diet quality, and the unique nutritional needs of athletes, including female athlete health.

Nanotechnology and Biodelivery Systems
Nanotechnology and Biodelivery Systems investigates the use of natural biomaterials to develop food-grade nanoscale platforms that improve food quality and safety, enhance nutrient bioavailability, and enable targeted nutrient delivery for the prevention and management of chronic diseases.

Food Quality and Safety
Food Quality and Safety focuses on ensuring the quality, safety, and consumer acceptance of foods through research in food microbiology, sensory evaluation, rheology, and texture analysis. This area also advances innovative solutions in food packaging, edible coatings, and the production of fruits, vegetables, and microgreens.

Food Innovation and Entrepreneurship
Food Innovation and Entrepreneurship prepares future leaders to launch and grow ventures in the food and agriculture sector by applying principles of bioengineering, bioprocessing, and biomanufacturing to create innovative bioproducts, biomaterials, and sustainable food technologies.
